The growing season has arrived, and we are so very happy to celebrate all things earth and the bountiful gifts it provides us! We’re excited to welcome the season with the opening day of the Ivanhoe Farmers Market and our upcoming Pancake Fundraiser Breakfast. This month, we’re also proud to share exciting updates from recent projects, including the launch of the 3rd Annual KC Farmers Market Passport, the addition of five new beehives in the Ivanhoe Gardens. As summer approaches, our programs and community center are gearing up for another busy and impactful season. From Harvest Days (every Tuesday @9am-12pm) to Volunteer Days in the Garden or our 2nd Saturday Farmers Markets, there are so many ways to get involved and make a difference. We are happy to welcome volunteer groups or individuals willing to get their hands dirty and support Ivanhoe's goals of beautifying our community and curbing food insecurity. 2026 Farmers Market Season Kickoff

Opening Day THIS Saturday!

We’re also excited to welcome everyone back for the opening day of the Ivanhoe Farmers Market on Saturday, May 9th from 9am-1pm! This season’s market will feature more than 20 local vendors, handmade goods, community resources, and special events throughout the year, including visits from the KC Symphony Mobile Music Box, our Back-to-School Backpack Giveaway, and Watermelon Fest.

Pancake Breakfast Fundraiser

Tomorrow, Saturday, May 9 from 9:00am – 11:00am join us inside the Ivanhoe Neighborhood for a pancake breakfast featuring a short stack of pancakes, sausage, real maple syrup, butter, and toppings. $5 suggested donation. This fundraiser directly supports the Ivanhoe Farmers Market, helping sustain local vendors, strengthen community access to fresh food, and keep this market thriving all season long.

2026 KC Farmers Market Passport

The 2026 KC Farmers Market Passport is officially here! For the third year, the Ivanhoe Neighborhood Council is proud to partner with Cultivate KC to help bring this fun and valuable community resource to life. Stop by the Ivanhoe Farmers Market or the Neighborhood Center to pick up your passport and start exploring farmers markets across Kansas City. Along the way, you can collect stamps, discover local vendors, and even earn prizes from amazing local businesses!

Cultivate KC Tool Library Now OPEN!

One of the coolest agriculture initiatives in town is the CultivateKC Tool Library, hosted right here at the Ivanhoe Neighborhood Center. For FREE, community members can sign up to rent farm and garden tools that are then returned after the borrowing period. This program provides access to tools necessary for successful growing operations without the exorbitant costs often associated with specialty crop production. Rental hours are every Tuesday/Thursday from 4pm-6pm by appointment only.

Five New Bee Hives In Ivanhoe 

Bees play an important role in supporting our community and ecosystem, and Ivanhoe is now the proud home of five new bee hives thanks to our partnership with Bee KC. Throughout the year, we’ll be offering educational workshops and opportunities for the community to learn more about beekeeping, pollination, and environmental stewardship — plus, local honey will be available from the hives! We hope you’ll join us in celebrating and learning more about these important creatures.

Harvest Days Are In Full Swing

Through a partnership with Kanbe's Markets, Ivanhoe Neighborhood Council is able to offer fresh produce weekly at the community garden. Garden steward Brittani Arnold (right) gathers the donated produce and produce grown onsite at Ivanhoe's Community Garden to share with the community. There are no requirements for participation, and this offering is open to the public. Join us every Tuesday from 9am-12pm on E. 37th street (across from the Ivanhoe Neighborhood Center).

Easy Low Carb Chicken and Bok Choy (Healthy 25-Minute Dinner)

Bok Choy (Bok Choi) is often in abundance this time of year! Check out this recipe from Savoryspin.com that utilizes the healthy, crunchy green, chicken, and vibrant flavors.

If you’re looking for a quick, low-carb chicken dinner that tastes amazing, this chicken and bok choy skillet is going to become a go-to. Heavily flavored with garlic and spices, this is a tasty and light weeknight meal when you are in a hurry.

Ingredients
  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 2 boneless skinless chicken breasts
  • 3 large cloves garlic
  • 1 medium yellow onion
  • 3 tsp ground coriander
  • 2 tsp smoked paprika
  • 1/2 tsp turmeric
  • 3 baby bok choy
  • 1/2 cup coconut milk
  • salt and pepper to taste
  • parsley and chili flakes to garnish optional

  • Instructions
  • Peel and chop the onion and garlic.
  • Heat the oil in a large skillet over medium-high heat. Add the chopped garlic and onion. Cook for about 8 minutes until fragrant.
  • While the onion and garlic cook, rinse the bok choy and cut off the ends of the stems. Then, chop each into bite-sized pieces.
  • On a separate cutting board, cut the chicken into bite-sized pieces as well.
  • Toss the bok choy into the onion and garlic mix and stir fry for 1–2 minutes until slightly tender. Then spoon this mix onto a plate and set aside.
  • Add the butter to the same skillet (or wok) and add the chicken in. Then, toss on the spices. Stir well and cook for 2 minutes. Then, flip chicken pieces over and cook another 2 minutes.
  • Pour in the coconut milk and simmer 1 minute.
  • Add the bok choy, onion, and garlic mixture into the pan with the chicken in spiced coconut milk and stir well.
  • Season with salt and pepper to taste.
  • Serve hot, optionally topped with red pepper flakes and chopped cilantro or parsley leaves.

  • Notes
    For this recipe, I usually alternate between prepping and cooking. For example, while the onion and garlic sautes, I rinse the bok choy and cut it up as well as dice the chicken.
